We are back with a unique offering from our friends at Yepocapa Coffee! This specific lot has been produced by Don Ramiro de La Roca Roca in Yepocapa, Guatemala, and has undergone an anaerobic natural process. Don Ramiro has made use of the unique properties that the Catimor varietal - larger cherry size, higher production yield, more mucilage, etc. have to offer in order to highlight the incredible characteristics of the anaerobic process on a varietal that we typically don't see this process being done to. A process in which the coffee cherries, while left in-husk, rest in anaerobic tanks, then undergo a mechanical pre-dry, then are patio dried. This extensive process resulted in one of the fruitiest, complex and sweet coffees we have ever had come across during one of our cuppings. A coffee we knew we wanted to share with everyone, while also showcasing the incredible effort and production that went into the processing of this coffee from producer Don Ramiro de La Roca Roca and the La Cooperativa San Pedrana processing facility! Expect lemon acidity, a bowl of fruity pebbles, and the refreshing finish of cherry coke. We hope you'll enjoy!
