We're back with another coffee from our friends at Yepocapa Coffee! When we heard the story of this farm, we knew we wanted to support their operation. The Golgatha Micro-lot is often the target of thieves. Don Timoteo (one of 9 farmers on the lot) has been experimenting with waiting to pick the coffee cherries until the sugars are at the perfect development. Coupled with the use of nitrogen-rich Pachum trees to supply the soil with a unique organic material makeup results in the cherries hanging out on the plant a little longer than usual. This extra time used to increase quality is preyed upon by nightly thieves. Mr. Timoteo coordinated a plan of nightly firecrackers and deterrents to ward away would-be thieves! Since so much work was put into the harvest of this coffee, we wanted to celebrate their efforts and present a truly unique cup of coffee. The farm practices are wonderfully displayed in this lot, offering a great complexity of flavors. Blackberry jam and graham crackers will be very prominent combined with a buttered caramel sauce mouthfeel. We are excited to share this coffee and story with everyone!
