JIM’S DARK ROOM

Grandpa Jim McCafferty has influenced Bindle in countless ways. His family homesteaded in Nebraska in 1883—the same year Jessup Farm was founded. Jim was a chemistry professor at Chadron State College and had many side hobbies, including coffee roasting, baking and film photography. His basement housed a darkroom filled with gear and developing equipment, where he meticulously developed each photo and organized them into slides.

He also built a homemade coffee roaster from a shop vac, chicken wire, and an old popcorn popper. I was gifted this ingenious contraption—and with it, thousands of slides and film negatives.

Our signature dark roast, Jim’s Dark Room (formerly Bunker Blend), pays homage to Grandpa Jim. It marks a transition from Bunker Blend—born during the lockdown—to something richer, more personal, and full of wonder. With each new printing of the label, we’ll release a fresh discovery from Jim’s dark room archive.

Here’s to the true craftsmen of times past and to a new generation carrying that spirit forward. We may have more technology now, but at the heart of it, we’re all just trying to make something beautiful for others to enjoy.
